New Orleans Shrimp Jambalaya

Bring the taste of New Orleans straight into your home with this easy jambalaya recipe that will have everyone hummin' a tune.

Ingredients
1 C. onion, chopped
1 C. celery, chopped
1 C. green pepper, chopped
2 cloves garlic, minced
1/2 stick butter, (4 Tbs.)
2 Tbs. flour
1 14 1/2 oz. can whole tomatoes
1 small can tomato sauce
2 C. uncooked rice, long grain
2 lb. shrimp
1 tsp. salt
1 tsp. pepper
2 1/2 C. water

Directions
Sauté onion, celery, bell pepper and garlic in butter until tender. Add flour and mix well. Add tomatoes and sauce and bring to a boil. Add rice, shrimp, salt, pepper and water. Cook covered on low heat until rice is tender. Add more water if mixture is too dry. Add additional salt and pepper to taste if necessary.

Yield: 6-8 servings
