Blue corn chips make these nachos extra colorful! Perfect for the Fourth of July!
Ingredients
1 pkg. blue corn tortilla chips
16 oz. can refried beans
1 whole diced tomato
1/3 C. chopped white onion
1 chopped Serrano chili pepper or other hot pepper (optional)
1/2 lemon, juiced
1/2 C. shredded Monterey Jack or cheddar cheese
Directions
Heat refried beans. Combine diced tomato, onion, chili pepper and lemon juice in a small bowl. Arrange chips on a large serving platter. Spoon hot refried beans over chips; top with tomato mixture. Sprinkle cheese over all. Serve immediately.
